Lost in the Black Forest

The cherries used in the cake has been soaked in kirsch, a cherry liqueur, for three days before they go onto the chocolate sponge cake. The three-tier sponge tower is layered with rich chocolate mousse and covered with kirsch flavoured chantilly cream before finishing with a generous amount of chocolate shavings.
