Enter the Tiger: The 'Who Turned out the Lights' Tart

Dark, velvety chocolate ganache spiked with cointreau and filled to the brim of the sweet pastry tart. The subtle taste of the orange liqueur balances the gentle bitterness of the chocolate in this rich dessert.

Slivers of candied oranges will be added into the New Year edition of the chocolate tart.

The ultimate indulgence for chocolate lovers.

Whole Tart (18 cm, serves 8 - 10) $40.00

Enter the Tiger: Pineapple Poppers

An indispensable treat during this festive season, these pineapple poppers are soft and crumbly on the outside and moist on the inside.

Filled with a generous portion of pineapple jam, these pastries promise an explosion of taste and texture in each mouthful.

Box of 32 poppers $24.00

Enter the Tiger: Between the Sheets

This is my take on the Indonesian dessert, kueh lapis.

Spiced cake batter carefully baked layer by layer to perfection. Taste the mixed spice and savour the brandy between the moist sheets of gold and brown.

20 x 20 cm (serves many many) : $50

fraiche christmas catalogue 2009 - fork in the mud chocolate cake

Who needs fruit cakes for Christmas when one can have an equally dense and rich chocolate cake?

The Fork in the Mud is made for those who like the indulgence of an uber chocolate-y cake. A cake so dense that the fork stays stuck in the cake. Infused with rum and coffee extract, this cake is the perfect way to end your Christmas dinner.

Lift me up! Tart

The refreshing flavours of passionfruit and raspberry are brought together in this tangy tart that serves as a palate booster. Want more kick out of the tart? Frozen raspberries are liberally added into the tart for an extra zing.

There is nothing like a dessert that packs a punch to wake up the senses after a heavy meal.

Whole Tart (18 cm, serves 8 - 10) $32.00

Rrrrroyal Chocolate

Can’t decide what you like in a cake? Try the cake that encompasses two different textures. Always a crowd pleaser, this is a soft chocolate sponge cake with a crispy inside and bitter-sweet chocolate mousse.
This is a 'virgin' cake that contains no alcohol.

Whole Cake (18 cm, serves 8 - 10) $48.00
Lite Version (14 cm, serves 4 - 6) $32.00

Lost in the Black Forest

You would be if you try this version of the classic black forest cake. The cherries used in the cake has been soaked in kirsch, a cherry liqueur, for three days before they go onto the chocolate sponge cake. The three-tier sponge tower is layered with rich chocolate mousse and covered with kirsch flavoured chantilly cream before finishing with a generous amount of chocolate shavings. And that's how you get lost in the forest.

Whole Cake (18 cm, serves 12 - 14) $54.00
Lite Forest (14 cm, serves 8 - 10) $45.00
